Some things just never get old. Well, they shouldn't, anyway. When it is cold and rainy and gray here in Central Ohio in February (it's a common misconception that we get a lot of snow. We really don't. That's Cleveland. We get gray rain and wind. Even better!), I will bring up these splendid pictures of tomatoes and be reminded of the promise of another bountiful summer.
I only had these giant slabs of bacon in the house, not really conducive to frying up and putting in a sandwich, so I decided to make a little BLT salad. Only 5 ingredients, but they are all important and shouldn't be skimped on. If you don't eat bacon, well, I really am sorry. At least don't go without the mayo.
1/2 head red leaf lettuce - with all the designer greens out there, I still really like red leaf. And iceburg. But that's another day.
Deconstructed BLT
3 strips good quality bacon, preferably from local pigs!
1 heirloom tomato, whatever strikes your fancy, or a blend. Here I have used a Great German. Isn't he beautiful?
4 small slices sourdough, toasted
Good Quality Mayonnaise. Nothing low-fat or otherwise. I like Duke's; you Southerners know a good thing, but it can be hard to come by up North. The Fresh Market carries it.
Slather bread with mayo. Assemble other ingredients and eat sitting outside, if possible. Make a fond memory to get you through the winter.
